Baked Atlantic Salmon

Ingredients:
Salmon
Olive Oil
Cajun Seasoning
Directions:
Purchase 2 pounds Salmon.
Spread 1-2 tablespoons of Olive Oil on bottom of 9×13.
Lay Fresh Salmon skin down in dish.
Sprinkle with favorite seasoning (our Family likes Creole Seasoning).
Then, a dab of butter,
Cover 9×13 with aluminum foil.
Bake in pre-heated 375 oven for 30-45 minutes.
Enjoy!!
Time: 10 minutes prep, 30 minutes to cook
Oatmeal Balls

Ingredients:
3 c. Oatmeal
3/4 c. Honey
1 c. Peanut butter
1 tsp. Vanilla
1/4 bag of chocolate chips (optional)
Directions:
Mix all ingredients in large bowl.
Put oil on your hands for easy rolling without sticking.
Place 1-2 tbsp. of mixture in your hands and roll them into balls.
Place on cookie sheet in refrigerator for 1 hour.
Time: 15 mins prep, 1 hour to set up
Chicken Tacos

Ingredients:
3 large boneless skinless chicken breasts
1 container fresh salsa
1 envelope taco seasoning
Low carb tortillas
Shredded cheddar cheese (optional)
Light sour cream (optional)
Directions:
Place chicken, salsa and taco seasoning in crockpot on low for at least 6 hours (on high for 4 hours).
After chicken is cooked, use a fork to shred chicken.
Use the shredded chicken to make your tacos.
If chicken has too much “juice” from the salsa, you may have want to strain it or use a slotted spoon.
Time: 4-6 hours
Salsa

Ingredients:
1 large can of whole, stewed tomatoes
2-3 whole jalapenos
1 medium onion, chopped
1 tbsp lemon juice
1/2 – 1 bunch cilantro
salt or sea salt to taste
Directions:
Put the tomatoes, chopped onion, lemon juice, and salt in a blender or food processor.
Slice and add the jalapenos.
Chop and add the cilantro…the more cilantro, the hotter the salsa becomes.
Blend all the ingredients until you reach the consistency you desire.
Chill for an hour.
Serve with chips or vegetables!
